Sunday Sweets – Peanut Butter Cup Brownies

I’m all for being healthy, but I’ve also found that depriving yourself of something completely only makes you want it more.  That’s why I decided to make these little tidbits as a dessert for our most recent get together!

These little beauties are Peanut Butter Cup Brownies, and I found the recipe on Pinterest.  Each one is actually mini muffin sized, but you can use a larger muffin pan if you want, but I went with a smaller sized portion so everyone could enjoy them.  That whole less is more thing, really does work, sometimes…

They were pretty easy to put together.  The hardest part was getting the center of the brownie to cave in (and that’s just about timing).  First I gathered my ingredients:  a boxed brownie mix (with the items that it requires – eggs, oil, & water), Pam for baking, 3/4 of creamy peanut butter, peanut butter chips and chocolate chips.

You make the brownies like you would any other time…

Then instead of putting the batter into a regular baking dish, you pour it into a greased mini muffin pan.

Bake the muffin shaped brownies for 13-15 minutes (your toothpick tester SHOULD come out gooey).  Now this is the hardest part – waiting for the middles to cave in.  Only about half of mine fell on their own.  For the rest, I had to tap the center with the back of a spoon to get them to drop.  Then I removed them from the pan and set them on a pretty plate, while the 3/4 of a cup of peanut butter was in the microwave for 45 seconds getting all melty.

Next I topped each mini brownie muffin with a spoonful of peanut butter and some of each kind of chip.
